Yeast bank

A yeast bank is a company or institution that stores, propagates and distributes commercially usable yeasts for brewers , bakers , winemakers and other uses. While large breweries often operate their own yeast banks, smaller breweries only have the option of a yeast bank. For safety reasons, however, large breweries store their own varieties in yeast banks.
