Henning Heise

Henning Heise (born October 25, 1967 in Cologne ) is a German hotelier and chef in Constance .

Life

During his training at the hotel management school in Heidelberg , which Heise graduated as a qualified sommelier in 1994 , he completed a semester in the hospital winery in Konstanz on Lake Constance in the field of oenology and ampelography . From 1986 to 1989 he completed further training as a restaurant specialist and cook at the Parkhotel Sankt Leonhard in Überlingen, as well as stays abroad in Canterbury and internships in various wineries in Bordeaux and Burgundy . Then Heise worked as a sommelier in Constance .

In 1991/1992 Heise worked as a restaurant manager and sommelier in the Sternehaus Berghotel Baader in Heiligenberg . There he was named Germany's best restaurant manager in 1992. This was followed by a three-year restaurant manager and sommelier activity in the 3-star Winkler residence in Aschau im Chiemgau with Heinz Winkler .

From 1997 Henning Heise worked in the 5-star hotel Las Dunas in Estepona , southern Spain, where he worked for two years as a restaurant manager and sommelier. In 1999 Heise returned to Lake Constance . Here in the Seehotel he worked as a restaurant manager and sommelier until 2002, then he took over the Hotel Residenz am See in Öhningen on Lake Constance, where he worked for five years as hotel director and chef.

Heise and his wife have been running the Ringhotel Schiff am See in Konstanz since 2007. In his “Bürgerstube” he cooked up numerous awards, including 16 points in the Gault-Millau and one star in the Michelin Guide .

Henning Heise is married and has two children.
