The Hotel Traube Tonbach is a five-star superior hotel in the Tonbach district of Baiersbronn . The holiday hotel is run by Heiner Finkbeiner and his family.

The main building, which burned down in 2020, was home to the Schwarzwaldstube restaurant , which has so far been awarded three stars in the Michelin Guide, with Torsten Michel as head chef, and the Köhlerstube restaurant with chef Florian Stolte .

history

Beginnings from 1789

Tobias Finkbeiner opened a tavern for woodcutters, charcoal burners, Harzbrenner and carters in 1789; the guest room was preserved as a farmhouse parlor until the fire in 2020 . The son Ludwig Finkbeiner became a baker and expanded the economy to include a bakery. The grandson Johann Georg Finkbeiner acquired the right to distill and distilled potatoes, beets, pome fruit, wild cherries and blueberries. In 1890, Friedrich Finkbeiner, in the fourth generation, offered, in addition to beer and cider, wine for the first time, which was brought from the Baden region in an ox cart. However, attempts to grow wine on site failed. He installed a cider factory that locals could also use.

Guest room from 1920

In 1920 Heinrich Finkbeiner rented out the first guest room in the fifth generation; by 1939 he expanded 14 more. His wife Franziska cooked. The guests were picked up from the train station in Baiersbronn by cart or sledge. During the war, the pension was confiscated by the organization “Mother and Child” and then by the French occupying forces. 1950 was reopened.

In 1957, Willi Finkbeiner opened a new guest house in the sixth generation. It is one of the first Black Forest holiday hotels to offer rooms with bathrooms and balconies. The house with 64 beds was the first wing of today's hotel.

Luxury gastronomy from 1977

In 1977 the Schwarzwaldstube was opened with head chef Wolfgang Staudenmaier and restaurant manager Heiner Finkbeiner ; Eckart Witzigmann , Paul Bocuse , the Haeberlin brothers and Jean Troisgros came to the opening.

In 1980 Harald Wohlfahrt became head chef at the Schwarzwaldstube. In 1992 the restaurant was awarded three Michelin stars under Harald Wohlfahrt . In 1993, Heiner Finkbeiner took over the management of the hotel from his uncle in the seventh generation.

In 2001 the bathing area was opened; it offered sea water basins, saunas, ice igloo, pool bistro, fitness room and a range of massages. In 2004 the conference rooms were renovated and supplemented with modern technology. In 2006 the Traube Tonbach Court was added. In 2009 the vinotheque Traube Tonbach was opened by Stéphane Gass.

Hotel building

Eighth generation from 2009

Matthias and Sebastian Finkbeiner joined the management team in 2009 and are continuing the family tradition in the eighth generation. In November 2009, Traube Tonbach put its combined heat and power plant into operation, which covers around 65% of the hotel's electricity needs. In 2010, Heiner Finkbeiner was named “Hotelier of the Year 2011” by “Der Große Restaurant & Hotel Guide”, also known as the Bertelsmann Guide. In 2011 and 2012 the main entrance of the Traube Tonbach was redesigned and the Spa & Resort expanded. In 2012 Matthias Finkbeiner took over the café in the New Meersburg Castle on Lake Constance as a tenant.

In addition, the house was converted into spacious apartments. Now the entire hotel complex was supplied with energy from its own combined heat and power plant. In 2014 the Schlosshotel Monrepos in Ludwigsburg near Stuttgart was taken over as a tenant. The castle hotel with tavern and 77 rooms as well as 10 event rooms is part of the Monrepos domain, an extensive park around the baroque Monrepos lake castle .

In 2017, Torsten Michel took over the position of head chef Schwarzwaldstube from Harald Wohlfahrt and continued to defend the Michelin Guide award with three stars. In 2019, the Köhlerstube restaurant was also awarded a Michelin star under head chef Florian Stolte .

Fire in early 2020

On January 5, 2020, the main building with both starred restaurants burned out; the building was then demolished in January 2020. The police assumed a technical defect was the cause. The operators announced that they would have a new building built by mid-2021.

Both restaurants will be reopened in an interim construction at the end of May.
