Heiner Finkbeiner

Heiner Finkbeiner (born January 2, 1949 in Tonbach, district of Baiersbronn in the Black Forest ) is a German hotelier and restaurateur.

Life

Finkbeiner comes from a hotelier family from Tonbach, who founded a tavern for lumberjacks there in 1789. He graduated from 1965 to 1968 a vocational training for cooking in Hotel Summer Mountain in Bad Wildbad , then cooked a year in the Hotel Bayerischer Hof in Munich and in 1969 head chef at the Hotel Bachmair in Rottach-Egern .

He completed the advanced training at the hotel management school in Heidelberg from 1970 to 1972 with the state examination as a state-certified business economist . During this time he worked at the reception and administration of the Hotel des Bergues in Geneva and the Park-Hilton , Munich.

From 1974 to 1976 Finkbeiner worked for Eckart Witzigmann in the Tantris restaurant in Munich as demi-chef and chef de partie . Then he put his master's certificate for chefs from at the Hotel Management School Heidelberg and the place became the Chef de Rang in Brenner's Park Hotel in Baden-Baden. In 1976 he married the hotel clerk Renate Fischer, the couple have two sons and two daughters.

In 1977 he became head of the Schwarzwaldstube restaurant in the Hotel Traube Tonbach , his uncle's hotel in his home town of Tonbach . In 1984 he became hotel manager. He developed the hotel in constant competition with the Hotel Bareiss, a few kilometers away . The Schwarzwaldstube has been awarded three stars since the Michelin Guide 1993, first under Harald Wohlfahrt , and since the Michelin Guide 2018 under Torsten Michel .

In 1993 Finkbeiner became the owner of the Hotel Traube Tonbach . He is supported by his sons Matthias and Sebastian, the daughter Antonia and the directors Jan Kappler and Björn Deinert.

On the night of January 5, 2020, the Schwarzwaldstube restaurant and two other restaurants were destroyed by fire .
