Hunter sauce

The hunter sauce ( Sauce chasseur ) is a strong mushroom sauce of the classic kitchen. It is served with fried beef , game or schnitzel .

preparation

For preparation, mushrooms and shallots are sautéed in butter, topped up with white wine and reduced , then cooked with a brown base sauce and refined with butter and parsley . In a variant by Auguste Escoffier , brandy and tomato sauce are also used.

Variants, industrial products

A hunter's sauce also seasoned with garlic is called Marengo sauce . As a further variant, hunter's sauce is also prepared with cream , which gives it a lighter color and a different taste.
