Jean Ducloux (born April 6, 1920 in Tournus , Saône-et-Loire department , † December 5, 2011 there ) was a French cook , restaurateur and author .

Life

At the age of 13, Ducloux began an apprenticeship as a chef at Henri Racouchot's restaurant Les Trois Faisans in Dijon , which was one of the best restaurants in France between the World Wars. His great talent was already evident at this time, because immediately afterwards he became a young chef with Alexandre Dumaine in the Hôtel de la Côte-d'Or in Saulieu , also a house with a very high reputation . As is customary in this industry, he then took several positions in various restaurants, including the Chez l'armée française restaurant .

When a restaurant in his home town became vacant in 1947, immediately after the war, he quickly rented it and started his own business. He named the restaurant after the local painter Jean-Baptiste Greuze Greuze , which still exists today and is called exactly that. He managed the house himself until 2003, but then decided to resign at the age of 83. His successor was the young head chef Yohann Chapuis. The style of the house was strongly influenced by the maître: Ducloux was seen as a cheerful person who created an unusual atmosphere in his restaurant room for upscale gastronomy. His countless stories and escapades were well known in and around the small town of Tournus.

He defined his cuisine and the philosophy of his life in two books: Jean Ducloux cuisinier à Tournus (Solar publishing house) and Les grands classiques de la cuisine française for Minerva publishing house.

Awards

The first star came just one year after the opening of the Greuze , the second in 1978.
