In 1817 he completed an apprenticeship as a carpenter with Martin Filser in Füssen and then worked there as a journeyman. It was his great wish to become an organ maker. In 1821 he began training as an organ maker with Andreas Handmann (1739–1833) in Schongau . He then worked as a journeyman in this trade for some time until he set up an organ workshop in his parents' home in Brunnen in 1824 and married the cook Michaelina Reinhart in 1826 in Schwangau. The first child from this marriage, a son, lived only one day from April 11th to April 12th, 1828. After the death of his first wife in 1830, Joseph Pröbstl married the saddler's daughter Josepha Scheitler from Füssen on January 29, 1833. This marriage resulted in another five children, three sons and two daughters. During his time, Joseph Pröbstl built many church organs in the Swabian region, but also house instruments, pianos , an aeolodicon and various school organs .
