Kilchoman [kɪl'homən] is one of the younger whiskey distilleries in Scotland and one of nine active whiskey distilleries on the Hebrides -Insel Islay in Scotland .

history

The Kilchoman distillery is located in the northwest of the island of Islay and is the only distillery on the island that is not directly on the sea. Until the founding of the Abhainn Dearg distillery on the Isle of Lewis in 2008, it was the most westerly distillery in Scotland. In addition, when it was founded in 2005, it was the first newly established whiskey distillery on Islay in 124 years. The distillery started production in June 2005; the first barrel was bottled on December 14, 2005. On September 9, 2009 - after the legally prescribed minimum maturation period in casks of three years - the distillery launched its first whiskey, the so-called Inaugural Release . The first bottle sold was auctioned for £ 5,400 . The other bottles of the Inaugural Release also fetch very high prices among collectors.

Kilchoman is a Scottish of currently only six whiskey distilleries for the production of the single-malt whiskey used barley (to about 30% and a phenol content of about 25 ppm ) itself malt . For this purpose, the distillery grows its own barley (namely Optic Barley ) on the adjoining site of the Rockside Farm , which is only used in the distillery's so-called "100% Islay" whiskey. The barley used for the "normal" bottlings, on the other hand, is bought in from the Port Ellen malthouse of the beverage giant Diageo , which is also located on Islay and is located on the site of the former Port Ellen distillery , which was closed in 1983 and 1992 respectively . However, the need for malted barley is comparatively so low that it would not be financially worthwhile to manufacture it using your own specifications. Instead, the distillery procures parts of the barley malted for the Ardbeg distillery's (probably the world's most peaty) standard bottling , so that the strength of the smokiness of the purchased barley is around 50 ppm of phenol content - twice as much as that of its own malt.

So far, only three-, three-and-a-half and, since 2012, five-year (Machir Bay) whiskeys from the distillery or a five-year cask strength variant are available on site. Since the inaugural release was published, four more bottlings have been launched every year at three-month intervals (Spring, Summer, Autumn and Winter Release). On June 16, 2011, the distillery also launched bottles of the “100% Islay” whiskey range for the first time. In the future, the introduction of five-, eight-, ten- and twelve-year-old (in 2018) bottlings is also planned. For the maturation, the first fill and refill bourbon barrels of the Buffalo Trace brand are mainly used , although some of the previous bottlings were partially matured in Oloroso sherry barrels.

With an annual production of 220,000 liters (as of 2017) of pure alcohol, Kilchoman is one of the smaller active Scottish whiskey distilleries.

In the 6th edition of the standard whiskey work Malt Whiskey Companion by the whiskey expert Michael Jackson , who died in 2007 , the inaugural release of the Kilchoman distillery received an above-average 84 out of a possible 100 points. Whiskey author Ian Buxton believes Kilchoman is one of 101 whiskeys that whiskey enthusiasts should have tried. In the Whiskey Bible , Jim Murray rates the Inaugural Release of Kilchoman with 87.5 out of 100 possible points.
