The Weißenohe Klosterbrauerei (also Weißenoher Klosterbrauerei ) is a brewery in Weißenohe in Upper Franconia , a municipality in the Forchheim district . The brewery has an annual production of around 20,000 hl.

history

After the Weißenohe monastery was founded in the second half of the 11th century, it can be assumed that the brewery was built immediately afterwards. In the secularization of 1803 the entire complex was sold. In 1827 the master brewer Friedrich Kraus acquired the brewing license and facility. The brewery has been family-owned since then .

Brewing process

The hard, chalky brewing water comes from the brewery's own springs in the Jura heights of Franconian Switzerland . The hops used and the barley come from the region, u. a. from Lilling and Herpersdorf . The brewer's yeast typical of the brewery is grown there itself. The yeast is separated off by means of kieselguhr filtration.

The product range includes the beer types Altfränkisches Klosterbier , Classic Bioland , Kloster-Sud , Bonifatius Dunkel , Bonator Doppelbock , Eucharius Märzen , Weißenoher Pils , Glocken Hell , Eucharius Pils , Minnesänger Pils , Barrique , Barrique Bock , Zwickel Pils , green MONKey and Cannabis Club . The brewery itself is bottled in wooden beer kegs and by external companies in crown cork bottles .

Classic , Barrique , green MONKey , Minnesänger Pils , Cannabis Club are brewed according to Bioland guidelines and controlled accordingly.
