Kroppkaka ( kroppkaka , plural: kroppkakor ) is a Swedish dish that comes in different variations, mainly along the Småland coast , on Öland , Gotland and in Blekinge .

Kroppkakor are a kind of potato dumpling made from pressed, boiled or raw grated potatoes, flour and eggs, often seasoned with salt and allspice . etymology

The word kroppkaka originated in the 1820s and is composed of kropp and kaka . Kroppa and kroppning is dialectal and means to cook a dumpling (Swedish: klimp ) from flour and water in a soup. Kaka is synonymous with cake or biscuit.

history

The kroppkaka originally consisted of a stuffed fish head that was boiled. In Kalmar Lan and Blekinge , kroppkakor was considered a regional specialty as early as the 18th century. At that time they were made from wheat or barley flour and filled with diced bacon or fish meat, for example. After the breakthrough in potato cultivation in Sweden in the middle of the 19th century, it became common to prepare the Kroppkaka from boiled and / or raw potatoes.

Regional variations

The so-called Blekingekroppkaka from Blekinge , also called grå (gray) Kroppkaka, contains almost only raw potatoes.
