Maria Marte

María Marte (* 1976 in Jarabacoa , Dominican Republic ) is a Dominican cook who worked in Madrid for a long time . She is the only chef from Latin America whose restaurant has been awarded two Michelin stars .

Career

At the age of twelve, Marte was already standing next to her father in the kitchen of a small restaurant in her home town. She became pregnant at the age of 16; later she had twins from another partner. After training in a bakery, she moved to Spain in 2003 because both her eldest son and her ex-boyfriend, who had found work in Madrid, lived there. The ex-boyfriend agreed to marry her so that she could get a residence permit. She got a job as a cleaner and dishwasher in El Club Allard restaurant in Madrid. From the beginning she wanted to be a cook and despite adversity and prejudice she fought for a place as a temporary worker in the kitchen. When one of the cooks left, Marte asked then head chef Diego Guerrero for the job until he gave in - initially as a test and on the condition that she would stay a dishwasher.

In 2006, Marte became Guerrero's right-hand man, even though she was not trained as a cook. Under Guerrero, the restaurant was awarded one Michelin star in 2007 and two Michelin stars in 2011. When Guerrero unexpectedly left the restaurant in 2013, the managing director Luisa Orlando decided on María Marte as head chef. From 2014 to 2018 Marte was able to defend the two Michelin stars for El Club Allard. Her first creation was a caramelized hibiscus flower with pisco foam on roasted pistachios . This dish was a success and so important to her that she got a picture of it as a tattoo . She describes her cooking style as cocina de mestizaje ( mestizo kitchen ). Their specialties are fish and seafood. She left the restaurant in early 2018. She plans to open a cooking school and restaurant in the Dominican Republic.
