Marx Rumpolt
Marx Rumpolt , mouth cook of Mainz Elector Daniel Brendel von Homburg , wrote Ein new cookbook from 1581, the first textbook for professional cooks in training.
Life
Before Rumpolt came to the court of the Elector of Mainz , he had worked for various other European princes and thus got to know the specialties of different regions, such as the cuisine of Bohemia and Hungary . One year before the death of his master, the Elector of Mainz, Rumpolt wrote his cookbook , which comprised 2000 recipes and 150 woodcuts by Jost Amman and also contained advice on cellar management .
A new cookbook
Like all cookbooks of the time, Rumpolt's cookbook was intended only for aristocratic kitchens; The menus consisted of up to thirty dishes, some of which were far too expensive for the common people, such as meat, spices or cane sugar . In simple kitchens, honey was used instead for sweetening , and meat was rarely on the table.
In Rumpolt's cookbook there is a recipe for earth tepalos , which is praised in the literature as the oldest potato recipe . However, in 1581 the term Erdapfel was not used for the potato , so that this representation can hardly be correct. Possibly it is a recipe for the preparation of earth chestnuts ( Bunium bulbocastanum ), which were previously planted in German gardens and in Bockenau, in the Bad Kreuznach area, not too far from Rumpolt's place of work in Mainz, called Ärdäbbel (Erdäpfel).
