Nisin is an antibiotic peptide from the group of lantibiotics ( antibiotics containing lanthionine ). It has a broad spectrum of activity against gram-positive bacteria . Nisin is produced by the lactic acid bacterium Lactococcus lactis . It is found in raw milk and is considered harmless to healthy people because it is believed to be broken down by digestive enzymes in a short time.
Because of its antibiotic effect (only against gram-positive bacteria ), nisin is suitable for preservation . It is approved in most European countries as a preservative for various foods ( pudding , cheese , processed cheese ). As a food additive , it has the number E 234.
Nisin is also used as an antibiotic in human and veterinary medicine .
Nisin belongs to the nisin family of pore-forming toxins . It uses Lipid II in the bacterial cell membrane to open a pore with a diameter of 2 to 2.5 nanometers for several seconds. It is a class I lantibiotic .
Analytics
Coupling of HPLC with mass spectrometry or ELISA tests can be used for reliable qualitative and quantitative determination of nisin in the various test materials.
