Peter Staub (born February 22, 1827 in Bilten , Canton Glarus , Switzerland ; † May 19, 1904 in Knoxville , Tennessee , United States ) was a Swiss businessman and politician in Tennessee.

Born in Glarus, he emigrated to the United States with his wife Rosina at the age of 27. In 1856 he came to Knoxville and opened a tailor shop . After the Civil War , Staub's business flourished and in 1869 he was appointed Swiss Consul for Tennessee. In this capacity, he helped the Tennessee Clonization Society establish the Swiss settlement Gruetli (now Gruetli-Laager ) in Grundy County . In October 1872, funded by Staub's successful real estate business, Staub's Theater opened and became one of Knoxville's premier cultural institutions for the following years.

In 1874 Peter Staub was elected Mayor of Knoxville for one year , followed by a second one-year term in 1881. As mayor, he took care of the establishment of the city fire brigade, the local school district and the expansion of the water supply. In 1878, Staub was the American representative at the Paris World Exhibition , and from 1885 to 1888 he was Consul of the United States in St. Gallen , Switzerland.

Peter Staub died in 1904 at the age of 77 as a result of a horse-drawn carriage accident. He was buried in the Old Gray Cemetery .
