Poznan St. Martin's Squirrel
The Poznan St. Martin's Croissant ( Polish : rogal świętomarciński ) is a pastry that is traditionally baked and sold in Poznan, especially on November 11th, the feast of St. Martin of Tours .
The croissant is a sweet croissant with white poppy seed filling and is one of the Polish products with a protected designation of origin in the EU .

The Polish name Rogal świętomarciński literally means 'Saint Martin's croissant'. The croissant may only be made by bakers and confectioners from Poznan and certain areas of the Greater Poland Voivodeship , a special certificate is required for this. Currently around 500 tons of St. Martin's squirrels are produced annually in Greater Poland (around 2,500,000 pieces), half of which are sold on St. Martin's Day.

Use puff pastry , the filling must among other things, white poppy seeds , vanilla , chopped dates or figs , raisins and cream are made. The Rogal świętomarciński is coated with a sugar glaze and sprinkled with ground nuts.
history
The tradition of the Martinshörnchen is old and goes back to early Christian times, when pagan sacrificial customs, in which horned cattle and related horn-shaped pastries played an important role, were combined with the legend of Saint Martin , whose horse is said to have lost a horseshoe . This part of the medieval European baking tradition is probably the origins of croissants and croissant connected.
In Poznan, the parish church of St. Martin, from which the name of an important downtown street can be traced back, was important for the development of the Martin tradition. The production of special St. Martin's squirrels has been documented since 1852; they have been distributed to the poor and needy since around 1891 on November 11th. Since then, the croissant has been an integral part of the regional culture in Poznan and Greater Poland. In 1923, French Marshal Ferdinand Foch expressed his appreciation for the Rogal świętomarciński .
