Queijo Rabaçal

Queijo Rabaçal ( DOP ) is a cheese ( Portuguese : Queijo) that comes from the Portuguese municipality of Rabaçal in the Coimbra district . It has been a protected designation of origin since 1996 .

Manufacturing

The cheese originally comes from the village of Rabaçal, but is now produced according to the original recipe and by hand in some places in the Serra do Sicó in the neighboring districts of Condeixa-a-Nova , Soure , Ansião , Pombal , Alvaiázere and Penela .

The Queijo Rabaçal is made from sheep's and goat's milk (Port .: Leite de Ovelha e Cabra) and offered as a hard cheese , but locally also as a cream cheese . Sometimes a non- DOP -protected variant made from cow and sheep's milk (Port .: Leite de Vaca e Ovelha) is sold.

The milk is with Lab set thick, and then the recovered fraction in cylindrical shapes having diameters of 10 to 20 cm and a height of 3.3 cm filled to 4.2, salted and ripened. The finished cheese has a smooth, dry to slightly oily, very light yellow rind and is almost white on the inside. It weighs between 0.3 and 0.5 kg and the fat content in the dry matter is at least 45%.

The taste is delicate and balanced and becomes stronger and more aromatic with increasing maturity. The cheese gets its aroma from locally grown herbs.

The cheese market Mercado do Queijo do Rabaçal has been held in Rabaçal since 2010 , annually on a Sunday at the end of April at the Roman archaeological site of Villa Romana ( Roman Villa of Rabaçal ). On the one hand, it is a small trade fair where Queijo Rabaçal products are shown and sold. On the other hand, it is also a cultural festival at which folklore , folk dancing , lectures and local gastronomy are offered and the Roman legacy of the place is commemorated with performances and other activities .

In 2012, 54 regional exhibitors, including 17 cheese producers, were represented at the fair.
