Rico Zandonella

Rico Zandonella (born June 6, 1961 in Ascona ) is a Swiss chef .

Life

At the age of 14, Zandonella began his cooking apprenticeship in 1976 at the Hotel Ascolago in Ascona with Horst Petermann , with whom he worked in a team for 34 years. In 1979 he went to the Suvretta restaurant in St. Moritz , then to the Crocodile restaurant with Emile Jung in Strasbourg (three Michelin stars ) and in 1980 to the Agnes Amberg restaurant in Zurich . In 1980 he went back to Horst Petermann, who had started his own business in Herblingen Castle . In 1981 he followed him to Petermann's Kunststuben in Küsnacht (two Michelin stars).

When Petermann retired in 2011, he took over the restaurant and called it Rico's Kunststuben . The restaurant was also awarded two Michelin stars. In mid-2015 the restaurant name was shortened to Rico’s .

Zandonella cooks classic French, complemented by influences from Mediterranean, Asian and Ticino cuisine.
