Samgyeopsal ( 삼겹살 ) is a popular Korean food . Samgyeopsal is more or less thinly sliced pork belly meat and is usually fried with garlic .

Origin of name

The word Samgyeopsal consists of the three syllables sam ( ) (“three” in the Sinocorean counting method ), gyeop ( ) (“layers”) and sal ( ) (“meat”). The term goes back to the fact that meat and fat layers alternate in the pork belly slices. It is basically irrelevant whether there are exactly three or more layers.

One variation is the ogyeopsal ( 오겹살 ). The syllable o ( ) means "five" in Sinocorean counting. This is the name given to pork belly from which the pork skin has not yet been removed, but is grilled at the same time. The exact name for this is Ggeobdaegi Ogyeopsal ( 껍대기 오겹살 ). The word ggeobdaegi ( 껍대기 ) means skin, crust or shell.

preparation

Samgyeopsal is mostly consumed as dinner . More or less thin long strips of pork belly are fried in the center of the table on a grill . The fat contained in the meat disappears into the drainage channels of the grill. The fried meat is left over. Depending on your personal taste, it is fried lightly to very crispy.

Onions , garlic , mushrooms and other ingredients are often placed on the grill together with the meat to give the dish a special flavor.

consumption

Before eating, the meat is cut into bite-sized pieces with scissors. The cut pieces are usually pushed to the edge of the grill to make room for the next “load”.

The pieces of meat are removed from the grill with chopsticks and dipped in a sauce depending on personal taste . Ssamjang ( 쌈장 ), Korean chili sauce Gochujang ( 고추장 ), fermented soybean paste Doenjang ( 된장 ) or Gireumjang ( 기름 장 , a mixture of salt and sesame oil) are mostly used as sauces . Then you can put the piece of meat together with other side dishes on a lettuce or sesame leaf, roll it up and put it whole in your mouth. Typical side dishes are numerous types of vegetables, kimchi , garlic cloves, mushrooms or grilled onions.

All in all, Samgyeopsal can be enjoyed in many different ways, which in turn leads to its great popularity.

Samgyeopsal day

March 3rd has been declared Samgyeopsal Day in South Korea . The background is the double occurrence of the number 3 in this date and the connection to the syllable sam ( ). Food discounters use this day as an opportunity to encourage customers to buy meat with numerous special offers.
