Schnüsch

Schnüüsch or Schnüsch refers to a primarily in Schleswig popular vegetable soup or a stew , in which thick and green beans , peas , potatoes , kohlrabi and carrots in milk are cooked. The diced vegetables can also be steamed separately in a little salted water and the milk only heated at the end. The different cooking times of the vegetables should be taken into account. Typical spices are a lot of parsley , possibly some savory and some white pepper . A generous piece of butter should not be missing. Holstein ham or pickled herring is served as a typical side dish. In some places bacon rinds or pork cheeks are also cooked with it. Elsewhere the dish remains vegetarian .

The origin of this dish lies in fishing , the landscape between Schleswig and Flensburg on the Baltic Sea . It is also known in Denmark under the name Snysk . Because of its ingredients, which should preferably be fresh from the garden, it is considered a typical summer meal, starting around the end of June.
