The company was founded in 1812 as the Konrad Müller lamb brewery . With the exception of the period from 1875 to 1890, when the Zum Ochsen Carl Völlm brewery was a second brewery in Schwieberdingen, it was the only local brewery. In 1837 Gottfried Wilhelm Essig bought the "Lamm" brewery. Until the 1970s, the brewery output rose to around 16,000 filled bottles a day. In 1981 the medium-sized brewery company was sold to the large brewery Stuttgarter Hofbräu and ceased operations in 1982.
Various retail stores are now located on the former brewery site. The brewery restaurant, which is registered in the monument book, was managed for a few years in the 1990s and was demolished in 2014.

For advertising purposes, the Schwieberdinger lamb brewery created several drinking songs , which were usually sung in the late hour in the brewery's own tents at festivals such as the Markgröninger Schäferlauf , the Bietigheim horse market or the Cannstatter Wasen . The best known are the two songs Schwieberdinger Bier and We drink another beer , which were sung by the Swabian actor Werner Veidt and released on record in the 1970s :
