Stefan Kapłaniak took part in three Olympic Games . When he made his Olympic debut in Melbourne in 1956 , he qualified in a single kayak over 1000 meters thanks to a victory in the preliminary run for the finals , in which he just missed a medal in fourth. In addition, he competed with Jerzy Górski in a two-man kayak in the 10,000 meter competition, which was held in just one final run. The two finished the race in tenth place.

Four years later in Rome he competed in two competitions. In the single kayak, he first took fourth place in the 4 x 500 meter relay before it reached the final thanks to second places in the hope and semi- finals . As fourth they just missed a medal win there. With Władysław Zieliński he started in a two-man kayak on the 1000-meter course and moved into this final with him after third place in the preliminary run and a victory in the semi-finals . In this they crossed the finish line in third place after 3: 37.34 minutes behind the victorious Swedes Gert Fredriksson and Sven-Olov Sjödelius as well as György Mészáros and András Szente from Hungary and won the bronze medal. At the Olympic Games in Tokyo in 1964 , Kapłaniak only competed again with Władysław Zieliński over 1000 meters. They reached the semi-finals via the repechage , but were eliminated there after finishing fourth in their run.

Even at the European Championships in 1957 took Kapłaniak in Ghent in one kayak over 500 meters third place. In 1958 he became world champion in this discipline in Prague as well as with Władysław Zieliński in a two-man kayak over 500 meters . A year later he won the bronze medal at the European Championships with the 4 x 500 meter relay in a single kayak in Duisburg , while he won the title in a single kayak on the 500 meter course. In 1961 Zieliński won the European Championship silver medal in the 500-meter distance in Poznan .

In his career, Kapłaniak won a total of 30 national championships in different classes. For his services to canoeing, he received the Knight's Cross of the Order of Polonia Restituta .
