Stubersheim was settled by the Alemanni in the 6th and 7th centuries. On May 2, 1092, Stubersheim was first mentioned in a document when it was donated to the Schaffhausen monastery. The brothers Adelbert and Beringer are listed as witnesses in the certificate. The St. John's Church was built in the 12th and 13th centuries. For Stubersheim a medieval aristocratic seat can be deduced from written sources, which however soon lost its importance. It can be found in the eastern part of the village. The gentlemen of Stubersheim, who must have belonged to the high nobility, named themselves after him. At the time of Ulm, Stubersheim was the seat of a bailiff. Stubersheim came to Bavaria in 1803 , to Württemberg in 1810 to the Geislingen District Office and in 1938 to the Ulm District .

The community of Stubersheim was incorporated into Amstetten on March 1, 1972.

In Stubersheim, a locality within the meaning of the Baden-Württemberg municipal code with its own local council and local mayor has been set up on the territory of the former municipality . It only includes the village of Stubersheim.
