The brewery was founded in 1885 by Joseph Schülein under the company Unionsbrauerei Schülein & Cie. founded in the legal form of a stock corporation . In 1905 the Münchner Kindl brewery was taken over and in 1921 the merger with the Münchner Aktienbrauerei zum Löwenbräu took place . The “Triumphator” brand of Löwenbräu AG was created by the Union brewery Schülein & Cie. Taken over in the course of the merger, as did the “Hellquell” brand. The name "Unionsbrauerei" was later only retained by the inn in the former brewery buildings, the inn was renamed several times: first in " Danny's Pan ", then in "Song-Parnass im Unionsbräu".

Some of the old brewery buildings are still standing today, and the brewery cellars are used for cultural purposes. Since 1990 the inn has been called “Unionsbräu” again, and until 2012 the naturally cloudy beer for the inn was brewed in the small brewery cellar. The dark bock beer “Unimator” was also brewed and served there seasonally . In addition to the Hofbräukeller building , the still-preserved Union brewery facilities are today the last remaining witnesses to the brewing industry that once flourished in many companies in Haidhausen; especially the cellars between Einsteinstrasse and Kirchenstrasse are significant as a monument.

From November 2012 the restaurant "Unionsbräu" was closed. The long-time host Ludwig Hagn is also the host of the Löwenbräu festival tent at the Oktoberfest ; the operation of the "Unionsbräu" had brought him losses for years, which he had offset with Oktoberfest income.

On December 1, 2015, the "Unionsbräu" restaurant was reopened without continuing the brewery operations. The new host Igor Divjak offers Bavarian and international cuisine in the restaurant on the ground floor. On the first floor and the two basement floors, it pursues a mixed usage concept, including celebrations and parties.
