White pudding (German: white pudding ) or oatmeal pudding (German: oat flake pudding ) is a popular dish in Ireland , Scotland and Newfoundland . It usually consists of pork and fat , beef fat , bread and oatmeal and is shaped into a sausage. This sausage is either cooked whole or fried in slices.

In Scotland, white pudding is also known as mealy pudding and consists of beef kidney fat, oatmeal, onions and spices , in the southwestern English counties of Devon and Cornwall as hog's pudding , which sometimes also contains a high proportion of intestines such as liver and lungs .

In Ireland, white pudding is part of the Irish breakfast ; in Scotland, batter-fried white pudding is sold in fish'n'chips instead of fish . White pudding with chips is also known as the white pudding supper . In Scotland, white pudding is also traditionally eaten with mince and tatties .

In addition to white pudding, there are also black pudding ( blood pudding ) and red pudding , which contains spiced pork.
