Sparkling wine

Winzersekt is the term for a sparkling wine produced by German winemakers themselves or on their behalf . It is always Sekt bA or quality sparkling wine bA, i.e. sparkling wine from certain growing areas . Sparkling wine is an individual product of the respective winemaker, because 100% of the grapes must come from their own vines. Winegrowers' sparkling wines are mostly made from one grape variety (i.e. from Riesling, Pinot Blanc, etc.), but cuvées from several varieties are also on the market.

German sparkling wines come from the following growing areas: Baden , Franconia , Palatinate , Middle Rhine , Mosel-Saar-Ruwer , Nahe , Rheingau , Rheinhessen , Württemberg , Saale-Unstrut and Saxony . Information about the winery, the grape variety (mostly single grape variety ) and the vintage must be printed on the label . The preferred grape varieties are primarily Chardonnay , Riesling , Elbling , Kerner , Silvaner , Trollinger , Dornfelder , Pinot Blanc and Pinot Noir .

The Winzersekt is the counterpart of the German winemakers to the champagne and crémant , which is made with the classic bottle fermentation . With the designation as sparkling wine, the winemakers emphasize that the basic wine for their sparkling wine actually comes from their company or from the growing area and is not - as with the large sparkling wine cellars - predominantly purchased abroad. When stored horizontally, a second fermentation takes place for one to two months , which creates a carbonic acid pressure of over 5 bar (hence the use of thick bottles). High-quality German sparkling wines are stored "on the yeast " for several years . The legislator prescribes storage for at least nine months. The longer it is stored on the yeast, the better the champagne aroma and the finer the champagne pearls become. After storage, the sparkling wine is shaken to separate it from the yeast.
