She has been interested in the Far East since she was very young. On her twelfth birthday, her father, a Unitarian, took her to an international peace conference, where she first encountered East Asian culture. In 1938 she left home to attend teachers' college in Hamada , a coastal city in southwestern Japan. She worked as an elementary and middle school teacher near her home village in the mountains of Japan. In 1947 she gave up her teaching post due to an illness, although she said she had never been weak or ill before. In college, she showed herself to be extremely talented in gymnastics , fencing , martial arts , archery, and modern dance. Her skills on the balance beam , in horse jumping and as an acrobat brought her to the national Olympic preliminary combats in Tokyo in 1941 , one month before the attack on Pearl Harbor . Until she was twenty-two years old, she said she had always been healthy. In January 1950 she found out about Georges Ohsawa and went to Yokohama to study macrobiotic philosophy at the "George Ohsawa Center".

In 1951 she left Japan and went to the USA . There she met Michio Kushi , who had studied with George Ohsawa five years before her and then continued his studies in international relations at Columbia University in New York . After her marriage, Aveline Kushi was responsible for the kitchen for the first time, and her cooking skills date from this time.

Aveline and her husband Michio founded the "Erewhon Natural Foods", the East-West-Journal, the East-West Foundation, the Kushi Foundation and the Kushi Institutes in Becket and in Europe, including Lisbon, Zagreb and Amsterdam .

Aveline and Michio have published more than 70 books, some individually, some together, see selection of works.
