The blue Silvaner is a white wine that is seldom grown today. The color of the grapes varies from a light shade of gray to a deep purple. The variety emerged from the Green Silvaner through a mutation .
origin
The grape variety was selected from the stocks of Grünes Silvaner from 1964 and has been approved as a yield grape variety in Germany since 1984. Today there are around 20 hectares of Blauer Silvaner in production. There is currently only one clone (ST 25) that is preserved and propagated in the Steinmann nursery in Sommerhausen . The nursery is also the German maintenance breeder. Since 2003, vintners and researchers in the Saale-Unstrut growing area have been trying to select another clone from old vines that are over 100 years old.
Ampelographic varietal characteristics
- The shoot tip is open. It is light green and hairy with medium wool. The young leaves are hairy and of a yellowish color.
- The medium-sized leaves are rounded, mostly wholly or slightly three-lobed and not very bulged (see also the article leaf shape ). The stem bay is V-shaped, open to closed. The leaf is only slightly serrated. The teeth are very broad compared to the grape varieties. The leaf surface (also called blade) is hardly blistered.
- The mostly cylindrical grape is rarely shouldered, medium-sized and medium-dense to compact. The round berries are medium-sized and dark red-purple in color.
The blue Silvaner is vigorous in growth, fertile and delivers - thanks to its strong flower firmness - consistently high yields in frost-proof locations. The grapes ripen from early to mid-October, physiologically about 2 weeks later than those of the Gutedel . Silvaner is susceptible to powdery mildew and, due to the mediocre ripeness of the wood, sensitive to winter frost. Very good qualities can be achieved with old vines and adequate yield regulation.
The blue Silvaner is medium in yield, medium to late ripening and is almost indistinguishable from the green Silvaner until the grapes are ripe . The grape variety is a variety of the noble grapevine ( Vitis vinifera ).
The wines are usually a little stronger than those from the Grüner Silvaner and, if the grapes have stood on the mash , they can also show a hint of onion skin color. The bouquet is mostly characterized by the scent of ripe yellow fruits with nuances of fresh herbs depending on the soil and type of aging of the wine.
