history

Until the revitalization, there were three halls on the site of the old Hamburg slaughterhouse, which were used for cattle trading until the 1950s and for slaughtering from 1975. After renovation and renovation by Fleischgroßmarkt Hamburg GmbH, the Schanzenhöfe was created. With their company Bullerei GmbH & Co.KG, Tim Mälzer and Patrick Rüther were co-investors and first tenants.

On July 1, 2009, the Bullerei restaurant (130 seats) with an attached bistro and Cafe Deli (50 seats) opened. In 2013, Tim Mälzer and Patrick Rüther received the City of Hamburg's start-up award in the rising category for their project.

Buildings and interior design

The building in Lagerstraße 34b, erected between 1911 and 1913, is the western part of the cattle sales hall as part of the Viehhof Sternschanze building complex and is a listed building . For the purpose of conversion, parts of the middle hall were removed and an inner courtyard was created. During the renovation, the interiors were largely left in the original industrial state of the historical building and supplemented with new components. The restaurant covers 1,000 m² of the original 11,000 m². The draft for the interior design of the restaurant comes from the Hamburg architect Giorgio Gullotta and is characterized by rustic elements and colorful comic-like paintings.

kitchen

Martin Schneider has been the head chef since June 2016. Even if Tim Mälzer is one of the owners, he is not involved in the production of the dishes during the à la carte business. The restaurant guide Gault-Millau wrote in 2013: “It is time for Tim Mälzer, who usually has so many ideas, to take care of his gastronomy; TV fame and a pleasant ambience are not a constant guarantee of success for any restaurant. "

  • The Gault-Millau describes the cuisine as home-style and awards 12 out of 20 points.
  • The Falstaff describes the kitchen as modern, creative and awards 83 out of 100 points.

media

Because of Mälzer's fame, the media often report on the restaurant. The tabloid Bild dealt with the project several times before it opened in 2008. In 2012 Die Welt reported on a concert in the restaurant with Rea Garvey and some prominent guests. In the same year, a comparison of the restaurants of three television chefs in the test followed in Stern . Bunte reported on its five-year existence in 2014.
