Calcium stearoyl-2-lactylate is the calcium salt of stearoyllactic acid ; Stearoyllactic acid is a double ester of stearic acid with two lactic acid units and is therefore called lactate .

Manufacturing

The substance does not occur naturally. It is produced in several steps through chemical reactions of stearic , lactic and polylactic acid (stearoyllactic acid) with calcium compounds.

use

Calcium stearoyl-2-lactylate is an emulsifier and stabilizer . It is used in the food industry, primarily as flour treatment agents and stabilization in dairy products used. In interaction

  • with gluten it is used to improve the baking properties of flour ,
  • with starch , their water-binding capacity is retained longer, so that baked goods stay “fresh” longer, and ultimately it ensures
  • with the milk proteins for better foam formation .

The unstable substance breaks down into its components in the food. It is considered harmless.

It is approved in the EU as a food additive (E 482) for certain foods (including desserts , liqueurs , various baked goods ) with maximum quantity limits of between three and eight grams per kilogram.
