Clostridium butyricum is a gram-positive , spore-forming rod bacterium thatgrowsexclusively anaerobically . It occurs in the intestines of humans and animals. It is also widespread in the environment and is found in the soil, on vegetables, in sour milk and cheese . It is one of the saccharolytic clostridia and formslarge amounts of gas in the form of carbon dioxide and hydrogen during fermentation, along with acetate and butyric acid . TheCBM 588 strain, which is free from toxin genes and virulence factors, has beenapproved as a novel food . The MIYAIRI strain is used as a probiotic to prevent antibiotic-associated diarrhea . However, there are also strains that produce neurotoxins andcan causethe disease of infant botulism.
