Dieter Wollstein

Dieter Wollstein (born January 20, 1947 in Weimar ) is a German restaurateur.

Wollstein did an apprenticeship as a waiter at the Hotel Elephant in Weimar. In 1976 he moved to East Berlin when they moved into the Palast der Republik there. Since 1984 he worked in the protocol department of the People's Chamber and headed it from 1986. He remained in this position in the months after the fall of the Wall until the People's Chamber was dissolved on October 3, 1990 when the reunification took place. Wollstein was not accepted into the service of the Federal Republic and had a new position since April 4, 1991 after a transition period.

In 1996 by Gerald Uhlig founded Café Einstein Unter den Linden Wollstein became restaurant manager. In March 2013 he retired as managing director.
