Disodium guanosine monophosphate

Disodium 5′-ribonucleotide ( E  635 ) is a flavor enhancer that is mainly used in condiments. It is a 50:50 mixture of the disodium salt of inosine monophosphate and guanosine monophosphate . and is often used in foods that already contain natural glutamate or added monosodium glutamate .

A mixture of 98% monosodium glutamate and 2% E635 has four times the flavor enhancing effect of monosodium glutamate alone.

Occurrence

Disodium 5′-ribonucleotide is present in every living cell . The sodium compound is crucial to the protein - metabolism involved and therefore particularly in the cell nucleus to be found.

The compound is obtained from natural cell material of plant or animal origin and can therefore be problematic for vegans and vegetarians.

Admission

E 635 is generally permitted, with exceptions for certain foods such as B. milk , butter , honey or pasta . The maximum allowed amount is 500 mg / kg (calculated as guanylic acid ); Exception: condiments ( quantum satis ). In the course of harmonization in the European Union , it is also approved in Germany.

safety instructions

As an endogenous substance , disodium-5'-ribonucleotide is generally classified as harmless to health for healthy people.

Like all purine-rich compounds in the human disodium 5'-ribonucleotide organism to uric acid eliminated. It can therefore lead to a storage of uric acid. As a result, if you already have uric acid disease ( gout ), further health problems can be expected. Gout patients should generally avoid foods that are rich in purine.
