Doubles
A doubles is a vegan snack from Trinidadian cuisine . It consists of two small, deep-fried flatbreads on which a chickpea curry and one or more chutneys are placed. The Doubles is a classic Trinidadian breakfast that is bought and consumed on the go. But it is also a popular snack between meals. Fast food restaurants have included the dish in their offer; however, the classic sales outlet is often a mobile stand at busy points in a city. The doubles are served on these on a sheet of parchment paper .
Ingredients and preparation
The flatbreads, called bara , are made from flour, water, baking powder, salt and turmeric. There is no fixed recipe for the chickpea curry ( channa ), even with the chutneys there are no limits to the imagination. As a rule, it is seasoned with chilli sauce , often rounded off with mango pieces or kuchela , a spicy mango relish . Instead of adding a second flatbread, a double is nowadays often wrapped in a single and larger flatbread.
North Indian immigrants brought the recipe for Chole Bhature (also: Channa Bhatura ) to Trinidad, heartily spiced chickpeas with Bhatura . In the course of time the dish was "Trinidadized" by using local spices. In 1936, Emamool “Mamoodeen” Deen (* 1917, † 1979), who was born in Piparo in Princes Town , developed the dish into a snack by converting the flatbread that was previously served as a side dish into packaging.
Compared to other snack foods that consist of a filled flatbread (e.g. taco , shawarma , bake and shark ), the double is quite moist due to the high liquid content of the chickpea curry and therefore difficult to eat. Experienced eaters use the flatbread as a replacement for cutlery, as in Ethiopian cuisine, and use it to spoon out the curry.

- In 2011, the Trinidadian filmmaker Ian Harnarine released a short film called Doubles with Slight Pepper , which received an award at several Canadian film festivals and in which one of the protagonists makes his living selling doubles.
- From March 2nd to 3rd, 2012 the Trinidadian parliament held the longest debate in the Trinidadian parliament with 27 hours as part of a motion of no confidence by the opposition against Prime Minister Kamla Persad-Bissessar ; The MPs ordered doubles as food.
