A little later, however, Eric Esch was able to record his first victory in Pride. After the well-known New Zealand K-1 and PRIDE fighter Mark Hunt had to cancel his duel against "Butterbean" at PRIDE 32 The Real Deal at short notice, the young wrestling shooting star Sean O'Haire stepped in for him. Eric Esch knocked the young American out after only 31 seconds with several blows to the head.

Larry Holmes , world heavyweight champion from 1978 to 1985, insulted Eric Esch in his memoirs for his looks and fighting style. He then challenged the 52-year-old Holmes to a fight. The fight actually took place on July 27, 2002 and the former world champion and 17 year older Holmes defeated Butterbean over ten rounds on points. Holmes was counted in the last lap after slipping without impact and briefly falling to the ground.

He competed twice with what was then WWF (now WWE): on December 7, 1997 in D-Generation X: In Your House against Marc Mero and on March 28, 1999 in Wrestlemania 15 against Bart Gunn in a brawl for all match, which he won. Further fights at WWE did not follow.

On June 26, 1999, the boxing match between Peter McNeeley and Eric Esch took place in Las Vegas . The ten-round encounter lasted only 2 minutes and 59 seconds, as the referee broke off the fight due to several heavy head hits from Esch against McNeeley and declared Esch the winner.

On June 29, 2003, the heavyweight American entered the K-1 ring for the first time and won the fight against Yusuke Fujimoto by knocking out in the first round. After he let the criticism of the press bounce back, however, he lost three consecutive fights in the K-1. Against Mike Bernardo , the American lost a fight for the first time by a knockout because of a kick to the head.

Eric Esch even made a short film debut in 2001 when he knocked out leading actor and stuntman Johnny Knoxville in an extraordinary boxing match in a department store in Jackass: The Movie .

On March 9, 2007, the American rose in Worcester (USA) against his compatriot Joe Siciliano in the boxing ring. After Butterbean had blown the scales with over 189 kilograms the day before, it became clear that this fight would be one of the heaviest in boxing history. His opponent was also a real super heavyweight with a fighting weight of 147 kilograms. There has never been a boxing match with two opponents whose total weight was over 320 kilograms in the USA. In the second of four rounds, Eric Esch sent his opponent down four times before Siciliano's corner threw in the towel.

His son Brandon Esch , called "Babybean", also entered the boxing ring on March 9, 2007 for his professional debut. However, he lost in the first round to knockout. Since then, Butterbean's son has only participated in MMA fights.

On November 7, 2007, Eric Esch was supposed to compete against his compatriot Jimmy Ambriz at the Xcess MMA in a title fight in the super heavyweight division, but he did not show up for the official weigh-in the evening before in Hollywood and was taken off the fight card, although Butterbean had previously attended interviews and photo opportunities .

Since October 18, 2008, the American TV channel CMT has been broadcasting the reality show Hulk Hogan's Celebrity Champion Wrestling , in which Eric Esch competes as a prominent wrestler against other American stars in professional wrestling . Staged wrestling matches take place under the direction of Hulk Hogan , who, along with other professional wrestlers, teaches two different celebrity teams. Eric Esch was the first celebrity to be cast by Hulk Hogan and broadcaster CMT.
