The production of dairy products began in 1960, bringing the Migros association dairies made competition. In 1968, CESA became the first Swiss company to package milk in Tetra Paks . Over the years, CESA gradually separated from practically all business areas (transfer to sister companies) with the exception of milk processing and in 1998 changed the name to Estavayer Lait SA (ELSA). The conversion was completed in 2003 with the conversion of the headquarters in Estavayer-le-Lac into the central production and logistics location of ELSA and the closure of all other locations.

In 2016 ELSA took over the majority of the Idhéa company in Hochfelden, Alsace . The production of the salad and other sauces will gradually be relocated there from Estavayer-le-Lac until the beginning of 2018. In 2017, ELSA increased its stake in Schwyzer Milchhuus AG from 34 to 60 percent and thus acquired the majority of the family-run company founded in Central Switzerland in 1899. At the end of 2017, ELSA and Migros left the Milk Industry Organization (BOM).

In mid-2019, ELSA took over SoFine Foods from the province of Limburg (Netherlands) (SoFine Foods belonged to Alpro from 2006 ). SoFine Foods produces vegan meat substitute products , including the Cornatur brand from Migros. By 2019, ELSA and the Migros Aare cooperative together with Aaremilch AG built a new milk filling plant in Diemtigtal .
