Filler (kitchen)

In the kitchen language , a (meat) filling for roasts or other dishes is called a filler (or fünsel , also finsel ) or "farce". Also the filling of sausage products ( sausage meat ) or pies . The meat is chopped with bacon , offal and other accompanying substances, such as ice cream, milk, bread, etc., ground in a meat grinder or cut into a cutter and mixed with salt and spices, possibly the finely ground mass is also diced bacon or larger pieces of meat (also tongues - or Ham cubes ) mixed in.

In addition to the meat fillings as a farce , there are also various purely vegetarian fillings that can be used to fill meat dishes as well as different types of vegetables, for example tomatoes, onions, cabbage rolls.

This filler is also used to fill the suckling pig or poultry and is then served separately with the roast at the table. Federweisser is also a popular drink on the Rhine .

In Schleswig-Holstein there is a filler for roast duck that is especially popular at Christmas and consists of soaked rolls , raisins and apples .
