Liquid egg is made from eggs for industrial food production. The liquid egg is either produced separately into egg yolk and egg white , or as a whole egg . It's a common ingredient in pasta , baked goods, and mayonnaise (egg yolk). The usual container sizes range from 1 liter Tetrapaks to canisters and tank trucks .

In order to reduce microbial risks, liquid egg is pasteurized or treated with another germ-inhibiting or germicidal method (addition of table salt or preservatives : benzoic acid , sorbic acid ). The resistant Salmonella (Salmonella paratyphi) are also inactivated. Liquid egg can be stored at 4 ° C for up to six weeks.

Liquid egg scandal

The liquid egg scandal in 1985 led to a crisis among German noodle manufacturers. The Stuttgart regional council, headed by Manfred Bulling , warned against “microbially contaminated” products. The allegation concerned, among other things, the German pasta manufacturer Birkel , who sued for damages in court. The legal battle dragged on for years. The court found that the state of Baden-Württemberg had made massive mistakes and fully rehabilitated Birkel. Birkel originally wanted 43.2 million marks (according to today's value about 39 million euros) as compensation from the state. In 1991 they finally agreed on 12.75 million marks (according to today's value about 11 million euros), which the country had to pay.

According to later press reports, microbial contamination is said to have actually been present, which was concealed by the cooperation of companies, a participating expert and the state government at the time. Documents that were available to the Stern revealed that Birkel products had actually used fertilized and incubated eggs, dirty eggs and slaughterhouse waste.
