The crossing took place in 1951 by Hans Breider at the Bavarian State Institute for Viticulture and Horticulture in Veitshöchheim near Würzburg . The plant variety protection and the entry in the list of varieties took place in 1979. Its name goes back to the term freshness source . The namesake refers to the fresh and classy taste of the wines of this variety.

The classy white wine made from it has a slightly distinctive variety bouquet and is similar to Riesling . Fontanara is a variety of the noble grapevine ( Vitis vinifera ). It has hermaphroditic flowers and is therefore self-fruiting. In viticulture , the economic disadvantage of not having to grow male plants that produce yield is avoided.
