Gerhard Schwaiger

Gerhard Schwaiger (born March 22, 1959 in Memmingen ) is a German chef who has been cooking on Mallorca since 1986.

Life

At a young age, Schwaiger cooked in the St. Stefanskeller in Konstanz , in the Adler with Rudolf Katzenbergers in Rastatt and in the restaurant Tantris (three Michelin stars ) under Heinz Winkler in Munich.

In 1986 he helped Heinz Winkler to set up the gourmet restaurant Tristán in Puerto Portals on Mallorca, where he became head chef in 1989. In 1988 the Tristán received its first Michelin star, in 1990 the second, which Schwaiger was able to defend until 2009. In 2000 the El Bistro del Tristán opened in addition to the gourmet restaurant and offered a Mediterranean, market-oriented menu.

In 2015 Schwaiger left the Tristán after 29 years when the restaurant was taken over by a Galician catering company. He opened his own Schwaiger Xino’s restaurant in Palma , which is located on the roof terrace of the Son Moix shopping center.
