Rudolf Katzenberger

Rudolf Katzenberger (born March 12, 1912 in Rastatt ; † December 4, 1999 there ) was a German chef who achieved international renown with his Baden cuisine .

Life

Katzenberger continued the “Adler” in Rastatt in the fifth generation as “Katzenbergers Adler”, which was an outstanding Baden restaurant in the 1960s and 1970s. Since Michelin's gastro criticism was introduced in Germany in 1966, he has been awarded a Michelin star in the Michelin Guide . In 1972 Vincent Klink started his cooking apprenticeship at Katzenberger. Klink considers the year at Katzenberger to be “my decisive cooking experience” and draws his “basic cooking attitude from the experiences from back then”.

He was a member of the Confrérie de la Chaîne des Rôtisseurs , an international community of chefs and gourmets. In 1979, alongside Arne Krüger, he became one of the co-founders of the Rastatter Kreis ( Chef International Association of Chefs and Restorers in Germany ), which undertook “culinary study trips all over the world” to “find out about the production, manufacture and quality of products on site” . He was also a co-founder of the Romantik Hotels & Restaurants gastronomy association, similar to its French counterpart, Relais & Châteaux . This self-help association was created as a reaction to the market entry of more and more foreign hotel chains in Germany, because "the German hoteliers feared that German, down-to-earth hotels would slowly disappear."

In 1994 Katzenberger sold the restaurant after 170 years of family ownership; it currently operates under the name "Da Franco".

He was married to the innkeeper Irmgard Katzenberger. The estate of the innkeeper family is in the Raststatter district archive.

“His cookbook collection was legendary, he also wrote articles himself, many and well, but he was less interested in creating recipes than in the philosophy of enjoyment and digging up old Baden recipes. He was an ardent patriot, friends with the Margrave of Baden , a cock in the basket at the Baden-Baden horse races and a witty salon lion. From the beginning he seemed to like me and so became my mentor . He sought contact not only with the guests, but also with the producers and suppliers. He used an original Baden regional kitchen , the menu changed day by day, because it was fresh from the market and extremely scarce. "
