In the metropolitan area of Heath, remnants of the Ohio-Erie Canal, which was part of the network of canals built in Ohio between 1825 and 1847, have been preserved over long stretches. Individual structures of the canal infrastructure have also been preserved, such as lock No. 1 three kilometers south of the urban area. The canals attracted a settlement that is still evidenced by buildings from the 19th century, such as the Davis-Shai House, which was extensively reconstructed with city funds.
Heath's history is closely tied to the development of Newark. In 1920, the Pure Oil Company built a new oil refinery in South Newark , named after Fletcher Heath, who had played a major role in the economic development of the Pure Oil Company. Over time, the refinery's railway station was also referred to as Heath station. In 1952, the citizens decided to spin off the Newark-South district as a separate city, which took the name Heath.
Between 1962 and 1996 the US Air Force's Aerospace Guidance & Metrology Center was stationed at Heath.
