Hermann Weigmann

Hermann Weigmann (born January 17, 1856 in Fürth , † February 19, 1950 in Kappeln an der Schlei ) was a German bacteriologist , brewing and milk scientist. As head of the “Research Station and Training Institute for Dairy Production” in Kiel, he founded modern milk bacteriology in Germany from 1889. Weigmann became the main sponsor of Benno Martiny's (1871–1953) idea to set up a dairy research institute. As a result of his efforts, the research institute was established in Kiel in 1922, the place of his own life's work.

Another family

The name Weigmann is first mentioned in Fürth in 1689. The “Zum Goldenen Schwan” inn was owned by the family from the second half of the 18th century (until 1880). Besides Herrmann Weigmann there were other well-known family descendants:

  • Otto Weigmann (1873–1940), son of the Commerce Councilor Georg Andreas Weigmann in Lauf. He was an art historian and became director of the graphic collection in Munich.
  • Wilhelm Weigmann (1875–1938), son of the innkeeper of "Zum Goldenen Schwan", Fritz Weigmann. He was head of the highest building authority in Bavaria and professor at the Technical University in Munich.

Life

Hermann Weigmann was born as the son of the pewter caster Johann Andreas Weigmann in the house "Zum Goldenen Schwan" at Marktplatz 2 in Fürth and attended the Latin school in Nuremberg . Even in his youth, Hermann Weigmann showed great interest in natural sciences, especially chemistry. In 1875 he passed the Abitur at the Royal Bavarian Realgymnasium in Nuremberg. He then did military service in the Bavarian Jäger Battalion in Erlangen.

Following his military service, Weigmann studied physiological chemistry in Erlangen as a pupil of Eugen Franz Gorup von Besánez (1817–1878), then in Munich as a pupil of Emil Erlenmeyer (1825–1909) natural sciences. In 1879 he passed the examination for the higher teaching post and received his doctorate in Erlangen in 1882. phil. with a thesis on "The production and investigation of derivatives of opianic acid". During his studies in Erlangen, he became a member of the Bubenreuther fraternity in 1879 .

After completing his studies, Hermann Weigmann moved to Rostock for a short time until the founder of food chemistry, Joseph König (1843–1930), appointed him to Münster in Westphalia. In 1888 Hermann Weigmann went to Hans Vogel (1852–1939) in Memmingen, where he had set up a private technical-chemical laboratory for brewing and dairy farming.

In 1889 Weigmann came together with Wilhelm Fleischmann (1837–1920) and then went to the experimental station for dairy in Kiel, where a new bacteriological department was set up. He traveled to the United States and studied the corresponding facilities at the agricultural test stations and universities and evaluated his observations fruitfully for the home country.

In 1922, after years of effort, Weigmann succeeded in founding the Institute for Bacteriology at the Prussian Research Institute for Dairy Farming in Kiel. Due to his advanced age, he was only able to run the facility for one year. His successor was Wilhelm Hermann Henneberg .

Scientific work

Hermann Weigmann is also one of the outstanding milk scientists Wilhelm Fleischmann and Benno Martiny. No one can be thought of without the other two. Everyone has achieved something immortal in their own area of ​​work, Weigmann in the bacteriology of milk and dairy products by introducing pure cultures, for which Emil Christian Hansen (1842–1909) had provided the model in the brewery. Particularly noteworthy are "Die Pilzkunde der Milch" 1911 and 1924, "Lehrbuch der Milchwirtschaft" by Wilhelm Fleischmann, which Hermann Weigmann completely revised in its 7th edition, and Wilhelm Eugling's "Handbook of Practical Cheese Dairy", which was published in 3. and 4th edition has been published by him.

Honors

The Vienna Society for Microbiology appointed Professor Dr. phil. et. agr. hc Hermann Weigmann for his services to microbiology in 1933 as a corresponding member.
