Josef Trippolt senior and junior

Josef "Sepp" Georg Trippolt senior (* July 8, 1948 in Bad St. Leonhard im Lavanttal ; † August 16, 2017 there ) was a top Austrian chef . Together with his son Josef "Seppi" Johann Trippolt junior (born January 1, 1973 in Wolfsberg ), he was given the highest distinction that can be given to a chef in Austria: "Chef of the year 2003" from Gault Millau.

Life

Josef Trippolt senior was born on July 8, 1948 in Bad St. Leonhard in Lavanttal at Hauptplatz No. 7 as the third child of Luise († 1968) and Josef Trippolt. His parents ran the Gasthof am Platz in Bad St. Leonhard at that time, with the mother acting as a cook and the father as a butcher in the in-house butcher's shop and as a farmer on a farm in the immediate vicinity. After he grew up here with his two older sisters and attended the local elementary school from 1954 to 1958 and the local secondary school from 1958 to 1962, he completed another year at the commercial school in Klagenfurt . After watching his mother cook from an early age, however, he followed in his father's footsteps and completed a three-year-old as a butcher and selcher in Bregenz on Lake Constance from 1964 to 1967 . After he had completed the apprenticeship competition in his third year of apprenticeship in first place, he passed his butcher's examination prematurely with success. He then completed a year of practical experience in a sausage and pate processing company in Schleswig-Holstein with a war friend of his father's . After that, in 1969 he still worked for a butcher's business on Lake Wörthersee before continuing his career as a butcher and selcher in his parents' business. After passing the master's examination for the butcher's trade in October 1969, Trippolt was the youngest butcher in Austria at the age of 21.

After his marriage to his wife Maria (née Schober), a trained commercial clerk, in 1971 he leased his parents' restaurant the following year. Another year later, he took over the entire business and rebuilt it. In the early days of his own inn, the regular owner Josef “the Tenth” was born on January 1st, 1973; daughter Margret Elisabeth followed on October 14, 1975. Both children were aiming for a career in their parents' business, whereby the son Josef Trippolt junior came back to his own company after his apprenticeship in the St. Christoph am Arlberg hospice and numerous months of practical work, where he supported the father from then on. Daughter Margret completed an apprenticeship as a hotel and catering assistant at Bleibergerhof in Carinthia. In 1980 and 1981, the Trippolts completely rebuilt their inn and brought their own new philosophy - quality thinking in all areas - to the table.

Trippolt senior then realized his great passion for cooking in his own inn, but actually came as a surprise to his career as a chef when one day in 1980 he had to step in for the inn's unusual chef. In 1985 he attended a cooking seminar in Laxenburg Castle , which was advertised by Michael Reinartz , the editor of the German version of the Gault-Millau . There he got to know the knowledge of his role models, such as Eckart Witzigmann or Emile Jung . Trippolt also cited the Arlberg Hospiz Hotel and its kitchen as a model. A gourmet restaurant was created from the inn with a bowling alley . Trippolt senior received its first Gault Millau toque back in 1989. The second hood followed in 1995 and the third in 2001 - together with his son. The father-son team also received a Michelin Guide star. The highlight of his career was the Gault-Millau “Cook of the Year” award in 2003.

In 2010, Seppi Trippolt Junior took over the "Trippolt Zum Bären" restaurant from his parents and has since been responsible for the kitchen and the business philosophy. In 2008 Seppi Trippolt married the well-known bestselling author and journalist Silvia Maderbacher. They have two sons together. After the death of Josef Trippolt Senior on August 16, 2017, Silvia Trippolt-Maderbacher took over the management of the restaurant and the management together with her husband Seppi Trippolt. Seppi's sister Margret got back into the business.
