Khichri (also Khichari, Khichdi or Khichadi ; Hindi खिचड़ी khicaṛī [ ˈkʰɪt͡ʃɽi ]; Bengali খিচুড়ি khicuṛi , Khichuri ) is an Indian dish whose basic ingredients are rice and lentils and which is prepared in different parts of India with various other ingredients.

history

Khichri is considered to be one of the oldest dishes in India. The name comes from the Sanskrit word khiccā . The traveler Ibn Battuta , who visited India in the 14th century, mentions khichri as a popular breakfast in his writings . Also Afanasy Nikitin , a Russian traveler the same time mentioned khichri. In the Mughal Empire , Khichri was obviously very popular, and it is mentioned several times in the Mughals' meal plans. There are several mentions of Khichri in the writings of Abu Fazl , the Ain-i-Akbari . There are also variants with saffron , many spices and with dried fruitsdescribed. The French traveler Jean-Baptiste Tavernier reported in the 17th century about a variant with green lentils, rice and ghee , which is consumed as dinner . Of Aurangzeb is said to have estimated a Alamgiri khichri variant called the fish and boiled egg contains. In different parts of India, recipes for khichri were varied further and for typical meals in traditional contexts. In 2017, Khichri was chosen as typical Indian food and presented at the World Food India Event in Delhi .

During the colonial period , the British came into contact with Indian cuisine and thus also with the khichri. In British households in India, khichri was often served for breakfast, often with fish, which was usually consumed in the morning immediately after being caught as it would spoil during the day due to the heat, and with boiled eggs. British returnees from India brought the dish to the mother country, where it became part of British cuisine under the name Kedgeree . Kedgeree became a popular breakfast dish, especially among the British upper class . In the British variant, fish (mostly smoked haddock ) and eggs are essential; the lenses were left out.

A similar dish, consisting of rice, lentils and noodles, also exists in Egypt under the name Kuschari .

Trivia

Khichdi was as the name for two Comedy - TV shows on Hindi selected. The first series aired on Star Plus in 2002 and was very successful, winning more awards than any other comedy television series in India before. The series was discontinued in 2004. The second series was significantly less successful and aired from April to June 2018. Fox Star released a film based on the first series in 2010 called Khichdi - The Movie , an unusual practice for India.

In November 2017, 918 kg of khichri were cooked on the occasion of the World Food India Event in Delhi. A team of 50 chefs, led by celebrity chef Sanjeev Kapoor, spent one night preparing the dishes, using a wok weighing over 300 kg as a saucepan. This has been recognized as the Guinness World Record . The khichri was subsequently distributed to orphans and other needy people by non-profit organizations .
