Chmeli Suneli

Chmeli Suneli ( Georgian ხმელი სუნელი , "dried herbs") is a Georgian herbal mixture that is widespread throughout the Caucasus region .

It usually consists in equal parts of dried, ground or grated coriander , dill tips , basil , bay leaf , marjoram , savory , tarragon , a trace of saffron or safflower and black pepper . Sometimes celery leaves , parsley , thyme , mint or lemon balm , hyssop and fenugreek are also included.

The mixture is a typical ingredient in Georgian sauces. These are spicy, mostly slightly sour and are made from fruits, nuts and Chmeli Suneli. In addition, the spice mixture is part of typical one-pot dishes.
