Horseradish or horseradish is a simple dish made from boiled pork or beef , root vegetables and horseradish (horseradish). It is known in southern Germany and Austria , especially in Franconia , Vienna and Carinthia .

In Styria , a related variant developed consisting of pork head and vegetables , served with potatoes and horseradish . This dish is called Styrian root meat and is also very popular in other federal states.

preparation

Either pork such as breast , belly , comb or head or beef such as B. Brisket (fresh or cured ) with spices such as salt , pepper , bay leaf , juniper , nutmeg , cloves , marjoram and caraway as well as the finely chopped root vegetables boiled in water until soft. Then the meat is cut into slices and the resulting broth is slightly acidified with vinegar . The meat is served with the vegetables, some of the broth and freshly grated horseradish or a horseradish sauce as well as boiled potatoes , mashed potatoes or potato dumplings as a side dish.

A comparable dish made from beef is called plate meat or boiled beef in Austria and Bavaria . However, it is less flavorful and the broth does not become acidic. It is therefore more similar to the boiled beef .

Horseradish is a typical parish fair in Franconia. It is not on the menu of the inns all year round, but is only offered on special days, such as the parish fair.
