Mädchenröte is a traditional Schleswig-Holstein dessert made from currant juice and egg whites. It has its origin in the fishing region or neighboring parts of the country.

To prepare it, first whip the egg white in a chilled bowl to form egg whites and, while still beating, mix the juice of red currants (or red and black currants ) and add sugar until a fine frothy cream is formed. Soaked gelatin is then dissolved in a little currant juice over moderate heat and lifted into the mass. Finally it is cooled well for a few hours until it has become stiff. Girl red is served with vanilla sauce or English cream .

In one variant, only black currant juice is used and no gelatin is added. This form of girl's red creates a soft, creamy foam and must be eaten immediately after preparation, as the juice will settle again after a while.

Another variant from the Dithmarschen region is prepared with currants or pureed raspberries and served with vanilla sauce. The traditional Dithmarscher dessert is called the Blushing Virgin .

The dessert should not be confused with “ Blushing Girl ”, a sweet dish with cranberries that also comes from Schleswig-Holstein cuisine and is also known as the “Blushing Maiden”.
