Marcello Fabbri

Marcello Fabbri (born December 9, 1970 in Rimini , Italy ) is an Italian chef .

Career

After training at the state cooking school in Rimini, Fabbri went from 1987 to 1988 to the Caffee delle rose with Gino Angelini in Rimini, in 1988 to the Hotel des Alpes , in Madonna di Campiglio and in 1989 to Gualtiero Marchesi and Brunelleschi in Milan . In 1991 he moved to the Galleria restaurant in Munich and in 1992 to Locanda Piccolit at the same location.

In 1993 he became head chef at the Anna Amalia restaurant at the Hotel Elephant in Weimar . From 2000 he was also the hotel's kitchen director. In 2003 his restaurant was awarded one star in the Michelin Guide ; it was the first restaurant in Thuringia to receive this award.

He has been cooking in the Weimar wine bar since September 2018 .
