Matthias Ludwigs

Matthias Ludwigs (born May 25, 1980 in Cologne ) is a German master confectioner , cook and non-fiction author. In 2009 he was elected Pâtissier of the Year.

Life

After leaving school, Ludwigs began an apprenticeship as a chef in 1996 and during this time he achieved second place in the German youth championships on the Petersberg in 1999 . Then he decided to do another apprenticeship as a pastry chef.

After completing his training, he became head pastry chef at the Lenbach restaurant in Munich in 2001 at the age of 21 . The chef there was Stefan Marquard . Ludwigs spent his military service in the bakery at Hardthöhe in Bonn , where he created cakes and pastries in the guest casino of the Defense Ministry . In 2003 he became demichef pâtissier at Dieter Müller in the 3-star restaurant Schloss Lerbach in Bergisch Gladbach . The local chef pâtissier, Frederic Guillon , awakened a passion for French pâtisserie in him.

Before he moved to Heidelberg at the age of 25 to take his master craftsman's examination in the confectionery trade, he went to sea as demichef pâtissier on the cruise ship MS Europa . In 2005 the master confectioner returned to Cologne and became head pâtissier in the Graugans restaurant of the 5-star hotel Hyatt Regency. Ludwigs gained notoriety because of his achievements, for which he was voted "Pâtissier of the Year 2009" by Gault Millau . “He conjures up marvels, all of which are images for the gods,” said the jury.

Matthias Ludwigs is one of the pâtissiers who appear regularly on TV and radio shows. Since 2009 he has been baking every 14 days for the show at home + on the go on WDR television and since April 2014 he has been a juror for the newly launched show Tortenschlacht on VOX . He has now written four baking and dessert books.

Matthias Ludwigs has been head pâtissier at “Törtchen Törtchen” in Cologne since 2009 and since 2012 co-owner of this pâtisserie with four branches. According to “Der Feinschmecker 2014”, “Törtchen Törtchen” is one of the 450 best cafés and roasting houses in Germany and according to the Varta Guide 2014 is one of four delicatessen addresses in Cologne.

Creations

His creations are mainly composed of two main and one or two secondary components. Popular combinations by Matthias Ludwigs are, for example, rhubarb-tarragon, banana-tam bark, coconut curry, yuzu-hazelnut, apricot-thyme and rosemary-pineapple.
