Sodium sorbate ( E 201 ) is the sodium - salt of sorbic acid . It is used as a preservative due to its inhibition of yeast and mold in particular . Due to the instability and a possible mutagenic effect of an oxidation product, it is rarely used in contrast to sorbic acid and is no longer included in the current list of approved additives of the European Union and Switzerland. Sodium sorbitol is metabolized like fatty acids by healthy people . However, it can affect the taste of the food itself. The permitted daily dose is 0-25 mg / kg.
